Cool yourself down with this Aperol Grapefruit Slushy on a scorching day as you sit back and unwind. Refreshing cocktail to enjoy with friends or use as dinner party dessert.

INGREDIENTS

1 cup pink grapefruit juice, fresh
90ml Aperol
60ml lemon juice
3 Tbs sugar

METHOD

1. Stir together all the ingredients in a bowl until sugar has dissolved. Strain the mix into a freezer proof container and freeze for 2 hours.
2. After 2 hours, break up the mixture with a fork then freeze again. Repeat the process until it has reached your desired consistency, snow-like consistency is the goal.
3. Scoop out the mixture into chilled glasses and serve immediately with fresh slices of grapefruit.
