If you're after a spiced chutney to slather on your sandwiches, look no further! This Apricot Chutney is super easy to make - you'll never buy it from the store again.
INGREDIENTS
1.5kgs fresh ripe apricots
500g onions
2 cups white vinegar
600g sugar
1 tsp salt
2 tsp five spice
1 tsp paprika
1 tsp black pepper
1 tsp ground ginger
METHOD
1. Wash, halve and remove apricot pits. Add into large pan with remaining ingredients then bring to a boil.
2. Reduce heat and simmer for an hour or until thickened, stirring occasionally. Mash with a potato masher, once slightly cooled, if you prefer it smoother.
3. Ladle into sterilised jars and seal tight. Chutney can be eaten once cooled or last up to 2 years if stored right!
