A quick and easy lunch box snack that everybody loves - light, fluffy with the perfect amount of sweetness! For a "healthier" treat, just swap out the chocolate chips for some walnuts.
INGREDIENTS
2 cups flour
1 tsp baking soda
½ cup brown sugar
70 grams butter, melted and cooled
½ cup milk
1 egg
1 tsp vanilla
3 ripe bananas, mashed
¾ cup chocolate chips
METHOD
1. Preheat oven to 180°C and grease a 12 cup muffin tin with cupcake cases.
2. In a bowl, combine flour, baking soda and sugar then set aside. In a separate large mixing bowl, combine butter, milk, egg and vanilla. Add bananas and mix until combined.
3. Add dry ingredients to the banana mixture and gently fold until nearly combined. Add chocolate chips and gently fold, being careful not to overmix.
4. Scoop batter into muffin tin and bake for 20 minutes or until golden brown. Rest for 10 minutes before transferring to cooling rack, serve warm.
