Looking for a way to mix up your pickles? Try this Garlic Chilli Pickles recipe for a tangy, spicy kick!

INGREDIENTS

2 cucumbers, washed and dried
2 garlic cloves, smashed
2 chillies, stem removed (add more for extra heat!)
1 tsp black peppercorns
1 tsp mustard seeds
1 tsp coriander seeds
½ cup white vinegar (rice or apple cider also work)
½ cup water
1 Tbs sugar
1 tsp salt

METHOD

1. Cut cucumbers into desired shapes, slices or sticks. Pack cucumbers into sterilised jars with garlic and chillies. Add peppercorns, mustard seeds and coriander seeds. 
2. In a saucepan, mix together vinegar, water, sugar and salt. Stir until all dissolved then remove from heat and leave to cool.
3. Pour warm mixture over the cucumbers in the jars and fill to the top, making sure the cucumbers are completely covered (top up with water if needed). Seal and refrigerate for at least 2 days before eating.
