Enjoy your delicious homemade Caesar salad dressing on your favourite greens. Top it with whatever you have lying around: nuts, croutons, eggs, bacon or Parmesan cheese!
INGREDIENTS
½ cup mayonnaise
¼ cup grated Parmesan cheese
2 tablespoons freshly squeezed lemon juice
2 teaspoons Worcestershire sauce
1 clove garlic, minced
½ teaspoon Dijon mustard

¼ cup extra-virgin olive oil
METHOD
1. In a medium bowl, whisk together the mayonnaise, Parmesan cheese, lemon juice, Worcestershire sauce, garlic, Dijon mustard, salt, and pepper until smooth.
2. While whisking continuously, slowly drizzle in the olive oil until the dressing is emulsified and well combined. Taste the dressing and adjust the seasoning as needed.
3. Use immediately or store in an airtight container in the refrigerator for up to 1 week. Pour into mini 150ml jars to take to work with your salad.
