Great nutritious salad that does a salsa in every mouthful. 

Black beans make for a tasty vegetarian alternative to mince!

INGREDIENTS

500g lean ground beef
1 tsp olive oil
2 Tbs your favourite taco seasoning
1 cup water
2 cups mixed greens
1 red pepper, cut in strips
1 cup cherry tomatoes, cut in half
1 cup corn
1 large avocado, diced
1 Tsp fresh squeezed lime juice
2 Tbs fresh squeezed lime juice
¼ tsp. ground cumin + a pinch of chili flakes
3 T olive oil

 

METHOD

1. Cook ground beef and oil on high heat until beef is browned.
2. When beef is well browned, sprinkle in the taco season and add water. Simmer on low heat until liquid is evaporated aprox 10min. 
3. Whisk the lime juice, chili, cumin and olive oil to create the dressing. Toss avocados with 1Tbs of lime juice.
4. Lay salad with green at bottom, then add meat, then vegetables, top with with diced avocado. Place dressing in capsule and seal well.
