I thought I would mix it up with this Oat Cookie Dough Bars recipe and try using oats instead of flour to avoid using the oven. The addition of the peanut butter helps cut through all of the sweetness - makes perfect lunchbox treats!
INGREDIENTS
2 ⅔ cups oats
½ cup butter, softened
1 cup brown sugar
1 tsp vanilla extract
⅓ cup milk
150 grams semi-sweet chocolate
½ cup smooth peanut butter
METHOD
1. Pulse the oats in a processor or blender until a flour like texture if formed. Whisk together the butter and sugar until well combined. Then add vanilla extract, milk and oats, mix until fully combined.
2. Line a traywith baking paper and spread out the mixture so that is flat and even. Refrigerate for two hours.
3. Just before taking out the dough, prepare the chocolate layer by melting the chocolate and peanut butter over a double boiler. Let the chocolate cool slightly before pouring over the dough and refrigerate for a further 20 minutes.
4. Remove from fridge once the chocolate has set; cut into squares and enjoy!
