The easiest jam recipe and so many great variations!
Switch raspberries for blueberries, blackberries, peaches (or a mix).
Substitute out lemon juice for orange or lime
Mix in some vanilla extract, lemon zest or a pinch of spice (cinnamon, ginger or nutmeg work well!)
Yields approx. 1 cup
NGREDIENTS
2 cups raspberries fresh or frozen
2 tablespoons chia seeds
1 tablespoon freshly-squeezed lemon juice
1–2 tablespoons maple syrup
METHOD
1. In bowl mix all ingredients. Cover and leave overnight in fridge.
2. Use a spoon or potato masher to mash the fruit to your desired consistency.
3. Give the jam one final good stir. Then serve immediately, or transfer to a sealed container and refrigerate for up to 5 days, or freeze for up to 3 months.
