This Tomato, Mozzarella and Basil Salad is the perfect light lunch on a hot summers day or even makes a great side dish with your dinner. If you're wanting some more protein, just adding some shredded chicken.
INGREDIENTS
1 punnet cherry tomatoes, halved
2 tomatoes (preferably heirloom), thinly sliced
100 grams mozzarella
¼ cup croutons (or toasted bread, ripped in bite size pieces)
¼ cup fresh basil, chopped
½ tsp salt
½ tsp black pepper
1 Tbs lemon juice
1 Tbs balsamic vinegar
METHOD
1. Assemble the salad by placing the tomatoes in a bowl then shredding the mozzarella on top.
2. Top with croutons, basil, salt and pepper. Drizzle with lemon juice and vinegar, serve and enjoy!
