The next time you are feeling peckish or don't know what to have for breakfast, try this Beetroot and Avocado on Toast. Change it up depending on what's in your fridge - I love adding feta, alfalfa sprouts or coriander!
INGREDIENTS
2 slices of bread
4 Tbs beetroot hummus (check out my DIY recipe!)
½ avocado, thinly sliced
6 cherry tomatoes, halved
handful of rocket, washed and dried
black pepper
salt
olive oil, optional
METHOD
1. Toast your bread to your liking. Once done, evenly spread with hummus.2. Top with avocado slices, tomatoes and rocket. Season to taste with salt, pepper and olive oil.
