You no longer have to buy hummus thanks to this Classic Hummus recipe! Now you can have full control over the consistency and get it exactly how you like it - serve it as a dip, in wraps or on a salad!
INGREDIENTS
1 x 400 grams can of chickpeas
1 clove of garlic, minced
juice of 1 lemon
⅓ cup tahini
½ tsp salt
½ tsp pepper
2 ice cubes
extra virgin olive oil, to serve
sumac, to serve (optional)
METHOD
1. Rinse the chickpeas under water then drain them. Add to a processor with garlic and blend until it becomes a powdery paste.2. Leave the processor running and add lemon juice, tahini, salt and pepper. Add in the ice cubes one at a time, until you have reached your desired consistency. If you want it more silky, gradually add water.
3. Transfer to bowl and drizzle with olive oil and sumac. If eating later, transfer to a jar or airtight container and refrigerate.
