Elevate your cheese and crackers, sandwiches or burgers with this rich and sticky Caramelised Onion Jam. Easy enough to make and perfect to stocked in the pantry or unexpected guests!
INGREDIENTS
3 large brown onions, diced
2 Tbs olive oil
1 sprig of rosemary
3 sprigs of thyme
⅔ cup firmly packed brown sugar
½ cup balsamic vinegar
salt and pepper, to taste
METHOD
1. In a large pan, add onions and olive oil and cook over medium heat for about 15 minutes or until golden brown. Reduce the heat to low and add the rosemary and thyme, then cook for another 3 minutes while stirring regularly.
2. Sprinkle over the sugar and let it dissolve without stirring it for 5 minutes. Increase the heat and cook for a further 5 minutes without stirring it, reduce the heat if it starts to burn.
3. Stir in the vinegar and simmer for 5 minutes, the mixture should thicken. Once reached your desired consistency, remove the herbs and add salt and pepper to taste. Spoon into sterlised jars and seal tight.
