Although the whole process takes a week, I promise this Strawberry and Gin Jam is well worth it! With only hints of the gin taste coming through, for more of a boozy kick stir through extra gin just before transferring to jars.

INGREDIENTS

750g (3 punnets) fresh strawberries 
500g sugar
700ml gin
zest and juice of 1 lemon

METHOD

1. Wash and hull 400g of strawberries then cut in half and add them to a jar. Add 150g of sugar then pour in the gin, seal and shake the jar to combine everything.
2. Store in a cool, dark place like a cupboard and leave it there for a week, giving it a shake once a day to help the sugar dissolve. After a week, strain the liquid (delicious to drink as is or make a cocktail out of).
3. Wash, hull and chop the rest of the strawberries. Add them to a large saucepan with the gin-soaked strawberries. Give it a mix then add the rest of the sugar and the lemon juice and zest.
4. Bring to a boil then reduce to a simmer for at least 15 minutes or till it has set. Pour into sterilised jars and seal tight.
