This delightful salad is perfect for those summer lunchtimes!
1 cup cherry tomatos, hlaved
200g cooked chicken breast, chopped
4 cups kale or lettuce
25g shredded parmesan cheese
Handful of croutons
2 cloves garlic, crushed
25g parmesan, finely grated
1 anchovy, minced
2 tsp dijon mustard
½ tsp worcestershire sauce
zest and juice of 1 lemon
½ tsp coursely ground black pepper
¼ cup low-fat greek yogurt
Place all dressing ingredients in dressing capsule, seal the jar and shake vigorously.
To assemble salad place tomato in base, followed by chicken, kale and Parmesan.
Top with croutons and seal Jar tightly.
