This nectarine iced tea is worth the extra bit of time that it takes to cook and infuse the nectarines into the syrup. With the perfect mix of tangy and sweet, you'll always have a bottle of this in your fridge!

INGREDIENTS

4-5 ripe nectarines, chopped (plus more slices for serving)
1 cup sugar
1 cup water
3 green tea bags
8 cups boiling water
mint (optional)

METHOD

1. In a saucepan over medium-low heat, add the water and sugar, stirring until the sugar has dissolved. 
2. Add the nectarines, cook until soft then remove from heat and slightly mash. Leave it to infuse for an hour.
3. Steep the tea bags for no longer than 5 minutes in boiling water and leave it to cool.
4. Add ice cubes and nectarine slices to a cup then pour over nectarine syrup and tea. Serve with mint.

*Nectarine syrup can be kept in the fridge for up to a week
