Cool yourself off with these homemade yoghurt ice blocks, using up all the stone fruit left in the fridge. The tangy, sweet fruit pairs perfectly with the yoghurt for a tasty summer treat!
INGREDIENTS
2 peaches
2 nectarines
¼ cup water
2 Tbs sugar
500g yoghurt
METHOD
1. Wash and dry the fruit then remove the stones and roughly chop.
2. Add to a saucepan with sugar and water, cook for about 12 minutes or until fruit is tender. Take off heat and let cool.
3. With a processor or potato masher, process the fruit mixture until smooth or has reached your desired consistency. Fill up the ice block moulds to halfway with the fruit mixture, then top up with yoghurt.
4. Insert sticks and put in the freezer for at least 6 hours. Serve immediately.
