These Asian-style pickled carrot ribbons are a delicious and easy way to add a burst of flavour and colour to your salads. The perfect balance of tangy, sweet, and slightly spicy - toss them into your favourite salad for a crunchy and flavorful addition, or use them as a tasty topping for sandwiches, tacos, or wraps.
INGREDIENTS
8 carrots, peeled
1/4 cup rice vinegar
1/2 cup hot water
2 tsp sugar
1 tsp salt
1 knob of ginger, thinly sliced

METHOD
1. Prepare your ribbons, by using a peeler to peel the carrots into ribbons. Alternatively, you can julienne them, cut them into matchsticks or simply grate them.
2. Pack them into glass jars and add a couple of slices of ginger to each jar.
3. In a bowl, mix together vinegar, hot water, salt and sugar. Stir unti dissolved.
4. Pour mixture over carrots, making sure they're completely covered. Seal the jar tight and let it sit for an hour before using. For best results, refrigerate overnight.
